The company at the forefront of this vitality is Enate. Since its formation in 1991, it now commands 27% of the regions export sales and is respected for its premium quality in 30 countries. The investment has been colossal. The company has 300 hectares of vineyards in production and is currently planting a further 200 hectares.
The futuristically designed cellars and winemaking complex has a capacity to store 4.1 million litres in stainless steel, has 5,000 French oak barrels and space to mature over 4 million bottles. Winemaking is highly automated, with a computer that can communicate in 12 languages; but the human touch is under the careful control of talented international star Jesus Artajona. Success is obvious with every market under a strict stock allocation; Enate produces world class wines.
Grapes:100% Chardonnay
Vinification: Manually harvested, the ripe grapes were softly pressed. Fermentation took place in French oak barriques with a final 8 months maturation on the lees in the same barrels. This adds complexity to the wine.
Taste: A lovely deep yellow colour with green tinges. A complex aroma that combines varietal qualities (hazelnut, toasted bread) with tropical fruits (pineapple, grapefruit) and the smoky tones imparted by the oak casks. Full and creamy on the palate, well developed with fresh acidity that leads to an extraordinary finish – long and balanced, accentuated by toasty notes.
Serve: At 12C, the wine is perfect with white meats, fish, smoked foods and strong cheese.
